At Yajambee Farms we like to do things differently. NOT charging you by the dressed weight is one of those “things”. We don’t charge on dressed carcase weight because we believe in delivering what we promise – no surprises, no disappointments and no confusing calculations.
“𝗧𝗮𝗸𝗶𝗻𝗴 𝗼𝗻 𝘁𝗵𝗲 𝗥𝗶𝘀𝗸 𝗢𝘂𝗿𝘀𝗲𝗹𝘃𝗲𝘀”
Let’s explain what “dressed weight” means: It’s the weight of the beef carcass immediately after processing and BEFORE aging begins. When you buy directly from a farm most will charge you in this way as this mitigates all risk for them as this isn’t the weight of beef you’ll ultimately receive. The beef you actually receive at this point is unknown and is always a very broad estimate. Between this initial weigh-in and your final delivery, several factors reduce the amount of beef you’ll actually get. The aging process itself causes moisture loss, and the animal’s breed and overall condition affects how much meat is on the frame. Even the butcher’s expertise influences the final yield. When all is said and done, you could receive as little as 65% of that initial dressed weight in actual beef – and that’s what you COULD be paying for!
Picture this: You’re soo excited about your big beef order, but when your delivery arrives you realise you’ve paid for a bunch of stuff you’ll never use. Soup bones? Check. Random bits of offal? Yep. Bags of bones? Why are those even in my order? And then to top it off, you realise you got less actual beef back than you expected!
Here is something some farms won’t tell you: when you pay by dressed weight, you’re actually carrying the farmer’s risk. And we don’t think that’s fair!
Instead, we shoulder that risk ourselves. Well, to be honest, we don’t carry that risk either as we know our product so well we are confident in doing these calculations prior to sale. So why should our customers worry about yield rates and complex pricing structures? We have taken all of that guesswork out of it for you.
